Christmas Cranberry Vinaigrette
Makes 1 1/2 cups -
1/2 cup dried cranberries
1/4 cup dried blueberries (optional)
1/4 cup dried cherries (optional)
1 tbsp crushed garlic
2 tbsp olive oil
1/2 tsp salt and pepper
1/2 cup orange juice concentrate
1/4 cup balsamic vinegar
1/4 cup flaxseed (or olive oil)
In fry pan place dried fruit(s), garlic, oil salt and pepper. Cook over medium heat until dried fruits soften, reduce heat and add orange juice, balsamic vinegar and oil. Cook for another 3-4 minutes to let juice render down. Remove from heat and let cool.
Great over spinach or mixed greens. I let guests add dressing themselves as a little goes a long way!
* You may want to add feta and 1/4 cup candied almonds to the salad just before serving for added flavour.
